INFUSION: Nutty, grassy light spice notes cinnamon, cloves

Jun Chiyabari, established in 2001, is an organic tea garden in the eastern Himalayan region of Nepal. Located in the hills around the small town of Hile in Dhankuta district North 27o 01' East 087o 19' at an altitude of 1600-2000 meters / 5000-6000 feet above sea level. This is approximately 200 km east from Kathmandu; 55 km west of Ilam in Nepal and 65 km west of Darjeeling, India.

Every tea to me is precious, and the more prized, the longer it takes for me to understand and draw out the fullest experience. On the first occasion steeling this tea, the aroma was pure, taste delicate, and somewhat ethereal. I realize that I needed to encourage the leaves with greater abundance, and found on the second occasion a more resilient balance. It does not lack the soaring clarity of a clear winter's sky from a mountaintop. And let me mention the Saigon Jade green; this too I welcomed very softly, and needed to brew stronger, but the the sweetness was even more pronounced with the slight increase in astringency and still the chamomile bloomed int eh cup.
