A unique white tea with delicious and interesting flavors, Shou Mei is a popular tea at our Tea Bar. Sweet notes of this medium body tea recall honey, maple syrup and date. Compared to its "superior cousins" Silver Needle white tea and White Peony, the earthy character is more in focus. But the tea is never coarse. The body is smooth -  much darker than a typical white tea - and the notes are well rounded making this a positively delicious tea that has aged well for at least 12 years.

 

STEEPING TIPS

Gong fu style: Use 6 gm for 150 ml gaiwan. Water temp: 180F. Rinse. Steep 10-15 seconds. As the liquor gets weaker steep longer. We steep our later steeps up to 2 mins.

Cup: Break off 3-4 gm from the cake. Water temp: 180F. Rinse. Steep 3-4 min. Re-steep a minute longer than previous steep.  

ORIGIN

Fuding. Fujian Province, China

Shou Mei white tea is made from leaves of tea bushes that are also used for making the premium Silver Needle white tea and the popular White Peony or Bai Mu Dan. However, the leaves for Shou Mei whitete are picked only after the other two teas are manufactured. The leaves are comparatively larger and contain less buds.

Delicious flavors, subtle changes with every steep

Sipping this as I write! It is exactly as described. The first time I made it, I weighed out the tea and it went from very light honey -colored to darker "regular" tea by the 5th steep, with lovely light peachy flavor throughout. This time I eye-balled it and used waaaay too much tea. Much darker to start, so I added more hot water (without the leaves) and it was fine. Follow the instructions! The flavors are fruity, subtle, and worth savoring every bit! Great for reflective journaling, sketching the great out doors, or just vegging out.
