This is a seasonal matcha from the house of Marukyu Koyamaen. Matcha of fall season is highly prized among tea ceremony practitioners as the year's "first" tea. It is made from leaves picked in spring. Following tradition, the plucked tea is stored in special containers and allowed to "rest" until the beginning of fall. Around middle of September the leaves are removed and then processed into matcha.
Prepare this matcha like our other ceremonial matcha: 2 chasaku scoops of matcha sifted and then whisked in around 2-3 fl oz of water at 185F.
