For nearly a year and a half, our ceremonial matcha sat on a wait list rather than on our shelves. Japan's matcha shortage — driven by a global surge in demand that outpaced what the tea fields could produce — meant our partner farm couldn't meet our order. We chose to wait rather than substitute with a matcha we didn't stand behind.

This batch is worth the wait.

Grown on a small organic farm of Kagoshima Prefecture, this is an Okumidori cultivar — prized for its deep green color, rounded sweetness, and gentle umami finish. The leaves are shade-grown for several weeks before harvest, then stone-milled slowly into a fine powder by a family of tea artisans whose craft spans generations.

Best prepared: traditionally whisked in a bowl with water heated to about 185°F. Also holds up beautifully as the base for a matcha latte.

Caffeine: moderate — gentler than coffee, with the steady focus that matcha drinkers know well.

Storage: keep the tin sealed and stored in a cool, dark place. For best flavor, use within two months of opening.

How to Prepare Your Matcha

  • To ensure a smooth, clump-free texture, sift the matcha powder through a tea strainer or sifter into your bowl. This step is essential to avoid clumps settling at the bottom.
  • Add approximately two bamboo tea scoops (or ½ to 1 teaspoon) of matcha powder to your bowl.
  • Pour 2 to 3 ounces of water heated to about 185°F into the bowl. Avoid using boiling water, as it can overpower the delicate flavors and natural sweetness of the matcha.
  • Using a bamboo whisk, briskly whisk the matcha in a "M" or zigzag motion. This incorporates air, creating a light and frothy layer on the surface.
  • To remove any large bubbles, gently lift the whisk and lightly glide it across the surface of the froth until it is smooth and uniform.
