Tea maker's note: "We use two leaves and a bud of the P312 variety. Once the leaves are brought to the factory, hot air is applied to control the enzymes and arrest the leaves from getting oxidized. This manufacturing process is unique due to the hot air process which dries the leaves just enough to retain their umami flavor. Some might classify this as an Oolong. But I guess as with all tea lovers, discussions surrounding good teas never end."
