Dong Ding Oolong Tea. Taiwan, Spring 2022

Dong Ding oolong tea is a traditional Taiwanese oolong that has a medium oxidation and roasting. It is well regarded for its fine balance of sweet fruity and roasted notes. 

This batch of the tea comes from the high elevation of Shan Lin Xi. Steeped in traditional gong fu style our Dong Ding tea starts off with light floral creaminess, spice (cloves), fruit (berries) and a mild sweetness. The floral accents get increasingly prominent in later steeps, along with the finish that gets sweeter. Long after the tea has been had a sweetness rises in the throat - a desirable character in a high quality tea.     

STEEPING TIPS

Gong fu style:
Use about 5-6 gm for a 150 ml gaiwan
Water Temp: 190F
Steeping time: 1 min, 30 secs, 40 secs, 50 secs, 1.5 mins
