Dong Ding tea is a traditional Taiwanese oolong that is mid-oxidized oolong tea and has a medium degree of roasting. Dong Ding, or Frozen Summit, is located in central Taiwan. The oolong has a floral, fruity and woody notes with a medium body.
Steeped in traditional gong fu style our Dong Ding tea starts off with light floral creaminess, spice (cloves), fruit (berries) and a mild sweetness. The floral accents get increasingly prominent in later steeps, along with the finish that gets sweeter. Longer steeps towards the end draws out a pleasant bite in the tea. Long after the tea has been had a sweetness rises in the throat - a desirable character in a high quality tea.
Gong fu style:
Use about 5-6 gm for a 150 ml gaiwan

Steeping time: 1 min, 30 secs, 40 secs, 50 secs, 1.5 mins

We sampled this lovely oolong tea though a tea class at Leaf, and loved it so much we just had to bring some home. I'm looking forward to enjoying the rest of the bag! It had a wonderful, complex flavor that changed with each steep when made with the gong-fu method we learned about in tea class. I would highly recommend this tea, and the tea class if you can grab a seat some evening.
