Dong Ding Oolong Tea. Taiwan, Spring 2021
Dong Ding tea is a traditional Taiwanese oolong that has a medium oxidation and roasting. It is well regarded for its fine balance of sweet fruity and roasted notes.
This batch of the tea comes from the high elevation of Shan Lin Xi. It was made by the farmer for the annual Spring 2021 Dong Ding competition. Steeped in traditional gong fu style our Dong Ding tea starts off with light floral creaminess, spice (cloves), fruit (berries) and a mild sweetness. The floral accents get increasingly prominent in later steeps, along with the finish that gets sweeter. Longer steeps towards the end draws out a pleasant bite in the tea. Long after the tea has been had a sweetness rises in the throat - a desirable character in a high quality tea.

Use about 5-6 gm for a 150 ml gaiwan

Steeping time: 1 min, 30 secs, 40 secs, 50 secs, 1.5 mins
