A classic green tea from China - one of China’s Ten Famous Teas (teas previously enjoyed only by the Emperor). Also known as Longjing, this beautiful tea with a distinct appearance is made by artisan tea makers. The budsets are finely plucked during mid-spring and painstakingly flattened, each leaf appearing like a sparrow’s beak or a papyrus sword.
On steeping it gives up a straw-colored liquor with a hint of amber. It has a fragrant floral bouquet with a smooth refreshing mouthfeel.
Steep 1-2 tablespoons for a 8-12 oz cup.
Water temperature: 170-180F
Steeping time: 2 minutes. Multiple infusions up to three times possible.
